I love macaroni; it reminds me of my Mum’s delicious macaroni bake which we used to devour after hours of swimming lessons when we younger. So this dish is for all the Mamma’s out there who get great joy seeing their kids wolfing down warm, creamy mouthfuls of pasta round the table after a long day.
Even though it is creamy, this recipe is dairy free and packed with nutrients. The zingy cherry tomatoes are fantastic against the bold flavour of the sauce; it will please a crowd of adults whilst being soft and yummy for baby mouthfuls too.
Sweet potato is a current favorite with my 17 month old Joshua and as his dramatic food throwing moods are a little trying at times I was joyful over his reliable enthusiasm for this vegetable. Alas, my celebration was cut short when my husband developed sweet potato fatigue – okay so we have eaten it a lot recently!
After discovering the delicious flavours of sweet potato and peanut curry at a veggie restaurant in London I decided this was the way back to my husbands heart (I know, who is this food blog for?!). The result (after a few secret lunch experiments) – we got sweet potato back on the dinner menu with Daddy and a tasty, grab-able, spoon sticky meal for little Joshua. Win, win!
I always considered myself to be pretty organised, but returning to work while trying to juggle childcare and providing 3 meals a day for my 1 year old (not to mention packed lunches for myself and hubby, oh and evening meals…) often leaves me searching the kitchen for anything quick and easy that can be eaten on the go!
