My husband is very proud of the fact that he is a quarter Indian, and while he has only been to India once, my one-year-old is embracing his roots in his love of Indian spices! These pakoras are another great snack for when you’re out and about, or for lunch, with a yoghurty dip (if you’re prepared for the mess that ensues!). Inspired by my sister-in-law’s recipe, they are proving a firm favourite!
My original plan for these was just to make a quick and healthy pram snack to take out and about with us. The result ended up so delicious that I’ve ended up making so many of these over the past few weeks, and everyone’s been enjoying them! It’s easy to get stuck in a bit of a rut when it comes to lunches. With a little bit of inspiration (we’ll provide that bit) and forward planning (you do that bit), you and baby don’t have to end up eating the same sandwiches day after day. Also, even for the really savvy finger-feeding infant, sandwiches with their contents that just want to fall out all over the place are a bit of an ordeal.
