Pukka Pancakes
We are a little bit excited about Pancake Day tomorrow so we had to bring you baby-friendly pancakes! We absolutely LOVE pancakes, but for some reason tend to only make them once a year…my boys have therefore enjoyed me experimenting and since this recipe is egg free there is no need to worry about egg-cessive pancake eating!
These American style pancakes are really quick and easy to make, and your little ones can even help, by mashing the bananas and stirring/whisking in the other ingredients. It is also really versatile, so get creative with your flavour combinations and enjoy experimenting…oh, and you can make them even more appealing for the kiddies by cutting them into fun shapes before serving!
Groovy Plantain & Coconut Curry
In our neck of London, almost every other shop near our house sells plantains. I never really considered using them before other than to make plantain chips, until a couple of years ago when a friend of mine lent me one of her auntie’s recipe books. Some dishes I tried did not turn out as anticipated, others were amazing and my absolute favourite one was a spicy plantain recipe. The use of plantain in a curry has stuck with me since and now even the kids love this mild version. Little pickle pakoras
My husband is very proud of the fact that he is a quarter Indian, and while he has only been to India once, my one-year-old is embracing his roots in his love of Indian spices! These pakoras are another great snack for when you’re out and about, or for lunch, with a yoghurty dip (if you’re prepared for the mess that ensues!). Inspired by my sister-in-law’s recipe, they are proving a firm favourite!

Secret Veg Pasta
I have a gorgeous niece who is nearly 3 and she absolutely adores her veggies as long as she doesn’t know she is eating them. My sister – trained in the art of toddler tea time – will mash the offending veg into sauces and occasionally place a couple of ‘whole veg distractions’ on top of the meal for her daughter to cast aside with dramatic indignation and then devour the veg packed meal non the wiser (genius!).
This is a peace keeping pasta recipe, replicating my sisters tried and tested veg hiding method for times when stealth rather than toddler negotiation are called for. It’s also a sustaining meal for Mummy’s and Daddy’s for those days where you have only had time for Weetabix (is there a faster to eat cereal?!) and cold coffee and you need to pack in some veg at dinner time.
