My original plan for these was just to make a quick and healthy pram snack to take out and about with us. Black bean and avocado quesadillas
Quesadillas are such a great lunch option both for little ones and adults and we love making different varieties of these. This is one of our favourite versions at the moment. So simple, yet delicious and healthy. The traditional quesadilla is loaded with cheese and, of course, my 3 year-old was adamant that his HAD to have cheese in it (because he’s 3 years old and 3 year-olds absolutely always know what is best). Carrot, Apple and Cinnamon Porridge
We’ll add a bit of veg to anything! Well lets face it, it can be pretty tricky to pack enough fruit and veg into our own meals throughout the day, but when it comes to picky babies and toddlers, well sometimes we just need to resort to popping veg into any meal we can. It turns out that this is a dreamy, delicious combination and tastes a bit like having warm, oaty carrot cake for breakfast! The apple, carrot and banana in this porridge make it sweet and textured, and the cinnamon, ginger and nutmeg make it even more warming and moreish. Teeny Tots Tagine
When autumn days finally start setting in, I love looking to warming, hearty one-pot dishes that are full of vegetables, colour and flavour. This one totally hits the mark and is a perfect seasonal dish for the whole family. Babies will love the sweet and juicy sauce mixed with couscous, as well as have fun grabbing the larger vegetable chunks; a great meal for mixing spoon-feeding and finger-feeding! Introducing not-so-palatable veggies
Some babies take to weaning and trying new fruits and veg beautifully. Others, not so much (you might want to see our ‘weaning woes’ post here!). Vegetables that are good first ones to try such as carrots, butternut squash, peas, broccoli, avocado, sweet potato, and red peppers, are naturally sweet, creamy, juicy and palatable, so tend to go down pretty well if they’re introduced a lot at the beginning (see ‘feed baby the rainbow’, our first blog post for more colourful and delicious ideas!). But even the most amicable of weaning babies have been known to struggle with the likes of the more bitter and strong-tasting veggies such as courgette, kale, beetroot, and spinach.
